Been a slow week or so. Sap flow had been minimal since the record flow of 7.625 gallons on February 22nd. I had only collected 2.5 gallons of sap the following 5 days until an odd day yesterday. I went out after dinner to find 4.5 gallons of sap bringing my six day total to 7 gallons. I was overdue for another late night boil and got to work.

I finished boiling late in the night with another 16 oz of syrup to add to the collection.

To date I have boiled about 40 gallons of sap producing 85 ounces of syrup. I am still amazed that I am making syrup from my trees. I wish there was a little more consistency in the weather so I could get a feel for what a typical season would be like, but for now I will enjoy the leap year snow storm and the lack of sap in the buckets. Judging by the latest 10-day forecast, there won’t be another good sap run until this Saturday & Sunday.
